As the title says. I deleted most of my outcomes since I didn't want the backlog of junk to take up space. The only thing I have saved are via discord uploads or stuff I edited in photoshop. Can I still upload them? Or can I just try to do my best to remember what the prompt was?

I'd say you could try remembering and uploading them, but you don't have to go that far if you don't want to. Despite the wording of the rules, it's not necessarily a hard requirement, but highly encouraged. Even then, plenty of self uploads don't have prompts... so.
Like he said. But if you have the original file generated without resaving on somewhere we can look at the prompt from the metadata of the image.
If its now its fine if you forgot the prompt just make sure to take note next time.
A problem is discord strips that metadata of the prompt I think.
